- 3 tbsp extra-virgin olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 2 tsp paprika
- 1 tsp ground cumin
- 1/8 tsp ground cayenne
- 28 oz can whole, peeled tomatoes
- ¼ cup Big Tree Farms Organic Original Lite Coco Aminos
- ¼ tsp black pepper
- 6 large eggs
- ¼ cup chopped cilantro
- ¼ cup chopped parsley
- pita bread for serving
- Heat oil in large pan over medium-low heat then sauté onion and bell pepper 5-7 minutes until the onion is translucent and lightly golden.
- Add garlic and spices to pan and cook, stirring constantly another minute to toast.
- Add tomatoes, Big Tree Farms, and pepper to pan then smash tomatoes using a large spoon. Simmer 5 minutes.
- Use large spoon to make 6 wells in the sauce and gently crack eggs into each. Season eggs with sea salt and more pepper to taste.
- Cover pan and let cook 4-8 minutes until eggs are cooked the way you like them!
- Sprinkle with cilantro and parsley then enjoy with pita bread!
