GOLDEN COCONUT SUGAR: WHY/HOW IS THE COLOR LIGHTER THAN OTHER COCONUT SUGARS?

With our entirely new proprietary process, we have been able to make our Golden Coconut Sugar in a way that does not require as much heat, resulting in less caramelization. It is the caramelization, which leads to darker colors, and stronger caramelly notes in traditional coconut sugar. This is why our traditional coconut sugar, Brown (formerly known as Blonde), is the perfect low glycemic 1:1 replacement for brown cane sugar.

NECTARS: HOW ARE AMBER AND BLONDE NECTARS DIFFERENT?

Big Tree Farms Coconut Nectars are delicious low glycemic all-purpose sweeteners. Amber is darker in color, has deep luscious caramel flavor profile and is the perfect replacement for maple syrup. Blonde is lighter in color, has a pleasantly sweet flavor profile and is the perfect replacement for agave or honey.

WHAT IS THE GLYCEMIC INDEX?

The glycemic index (GI) provides a measure of how quickly blood sugar levels rise after a particular food is eaten. The effects that different foods have on blood sugar levels can vary considerably. This index estimates how much each gram of available carbohydrate (total carbohydrate minus fiber) in a food raises a person’s blood glucose level following the consumption of the food, relative to the consumption of pure glucose. Glucose has a glycemic index of 100.

WHY IS COCONUT SUGAR BETTER THAN CANE ISN’T SUGAR IN ANY FORM STILL JUST SUGAR?

SHORT ANSWER: Yes, sugar is still sugar and we should be mindful of our consumption levels. But what makes Coconut Sugar the perfect sweetener is that it’s unrefined (more nutrients left in and not stripped away), low glycemic (no sugar crashes), easy to use (a simple one to one replacement for cane) and it tastes so so good.
