Watermelon Margarita with Homemade Tajin

A bright, refreshing margarita made with fresh watermelon, tequila, lime, and Organic Coconut Sugar, finished with a homemade Tajín rim for that perfect sweet-smoky-salty flavor.

INGREDIENTS

Yield: 2 Unforgettably refreshing drinks

COCKTAIL

1 1/3 Cup (200 g) seedless watermelon, cubed

4 oz Tequila Blanco

Juice 1 lime

1 Tbsp Big Tree Farms ROC Golden or Brown Coconut Sugar

Ice

HOMEMADE TAJIN

1 tsp smoked paprika

1 tsp salt

1 tsp Big Tree Farms ROC Golden Coconut Sugar

1 tsp Big Tree Farms ROC Brown Coconut Sugar

GARNISH: Lime slices

INSTRUCTIONS

Make the Homemade Tajin:

  1. Combine smoked paprika, salt, Golden Coconut Sugar, and Brown Coconut Sugar on a small plate
  2. Moisten the rim of two coupe margarita glasses with water or lime (or whatever cute glass cup is around - a mason jar works!)
  3. Roll the rims in the Tajin mixture until evenly coated

Make the Watermelon Puree:

  1. Blend watermelon and coconut sugar until completely smooth
  2. Strain the puree into a cocktail shaker

Assemble the Margarita:

  1. Add Tequila, lime juice, and plenty of ice to a shaker with the watermelon puree.
  2. Shake vigorously until well chilled.
  3. Strain into prepared glasses
  4. Garnish with a slice of lime and serve immediately.

Chef's Note: Straining the watermelon puree creates a silky-smooth margarita while preserving its fresh, vibrant flavor. If you'd prefer a more slushy-like margarita, freeze watermelon for 1-2 hours and blend with ingredients in an electric blender and pour directly into prepared glasses.
