Hearty Vegan Pad Thai

INGREDIENTS

Crispy Dry-Fried Tofu

  • 1 block of extra firm tofu, pressed for at least 30 minutes
  • Pinch of salt

Sauce

  • 1/4 cup of lime juice
  • 1/2 cup of Big Tree Farms Organic Coconut Aminos
  • 3 tbsp water
  • 3 tbsp Big Tree Farms Organic Brown Coconut Sugar
  • 3 tbsp tomato paste
  • 3 tbsp rice vinegar

Noodles

  • 14 oz rice noodles

Veggies

  • 1 medium crown of broccoli
  • 2 small heads & leaves bok choy
  • 1/3 cup sliced shallots or red onion
  • 4 cloves garlic, minced
  • 1 cup sliced green onions
  • 1/4 cup roughly chopped cilantro (optional)
  • 2 tsp avocado oil

Toppings (Optional)

  • 2 cups thinly sliced cabbage
  • 1 carrot thinly sliced
  • 1 cup bean sprouts
  • Chopped peanuts
  • Lime wedges

INSTRUCTIONS

Making the Crispy Dry Fried Tofu

  1. Cut tofu into 1/4 inch planks and cut those in half again. You should end with about 20 pieces.
  2. Heat up a cast-iron skillet over medium heat. Once pan is hot enough, add in the tofu in a single layer. Feel free to do multiple batches of this. Once the tofu hits the pan make sure it sizzles. If it doesn't turn the heat up to high.
  3. When the tofu is in the pan, sprinkle salt over the top of the tofu and press down on the tofu with your spatula.
  4. After 3-4 minutes or when the bottom of the tofu is golden brown, flip the tofu and repeat the process. Once all of the tofu is cooked, feel free to cut the tofu into any shape you like!

Making the Pad Thai

  1. Mix all of the sauce ingredients together and place in a medium glass bowl.
  2. Cook the noodles according to the package. Once done cooking rinse the noodles with cold water.
  3. Chop up the broccoli, shallots or onion, bok choy, cilantro, garlic and green onions into tiny pieces and lay out in preparation for a fast stir-fry.
  4. With everything lined up, heat up the avocado oil in a large pan or wok.
  5. Once the pan is hot add the shallots/onions and stir-fry them until a dark golden brown or until slightly charred.
  6. Add in the broccoli and fry it for about 5 minutes.
  7. Add in the bok choy, and fry for another 5 minutes.
  8. Add in the green onion, garlic and cilantro if using and fry for 1 minute, mixing & tossing together well.
  9. Add in the noodles and add in 1/3 cup of the sauce.
  10. Toss up the ingredients in the pan and make sure everything is covered in the sauce.
  11. Once everything is coated, fold in the tofu and cook for another 30 seconds. Add in as much sauce as you want.
  12. Once finished turn off the heat and serve up. Add in the optional ingredients if you want and enjoy while it's hot!
