Powdered Coconut Sugar Buttercream Frosting

Ingredients

  • Yield 8 large cupcakes or 16 small cupcakes. Can double for a delicious double layer cake!
  • 2.5 cups Big Tree Farms Powdered Coconut Sugar
  • 1 cup Unsalted butter, softened to room temperature
  • 6 TBSP Heavy cream
  • 1 tsp Salt
  • 1 tsp Vanilla Extract

Instructions

  1. In a mixer with paddle attachment, beat the butter until smooth and creamy.
  2. Gradually add the Powdered Coconut Sugar, mixing until incorporated.
  3. Add heavy cream, salt and vanilla extract.
  4. Mix on low speed until the buttercream becomes light, fluffy, and pipeable.
  5. If needed, adjust the consistency with a little bit more cream.
