Soba Noodle Stir Fry

Ingredients

3 tbsp Big Tree Farms Organic Coco Aminos
3 tbsp apple cider vinegar
2 servings soba noodles
1-2 tbsp olive oil1red bell pepper
¼ cup yellow onion
2 cloves garlic 
1-2 tbsp ginger, fresh
1 tsp serrano chili
1 cup favorite mushrooms

Directions

  • Bring a medium pot of water to boil  
  • In a small bowl stir together Big Tree Farms Organic Coco Aminos, and apple cider vinegar. Set aside. 
  • Meanwhile, prep veggies:  
  • In boiling water, cook 2 servings of noodles according to package until al dente then strain and set aside. 
  • While noodles are cooking, heat olive oil a wok or large pan until hot, but not smoking. 
  • Over medium-high heat, cook bell peppers and onion for about 4 minutes until starting to soften and caramelize. 
  • Add ginger, garlic, chili and white parts of green onions and cook until fragrant, about 1 minute. 
  • Add mushrooms and cook another 1 minute. 
  • Add Coco Aminos mixture and cook until reduced by about half, about 2 minutes.  
  • Remove from heat and stir in cooked noodles and sesame oil, mixing until coated.  
  • Serve topped with the greens of the green onions.
