Soba Noodle Stir Fry
Ingredients

ginger, fresh

serrano chili

favorite mushrooms

apple cider vinegar

soba noodles
1-2 tbsp
olive oil
1
red bell pepper
¼ cup
yellow onion

ginger, fresh

serrano chili

favorite mushrooms
Directions
- Bring a medium pot of water to boil
- In a small bowl stir together Big Tree Farms Organic Coco Aminos, and apple cider vinegar. Set aside.
- Meanwhile, prep veggies:
- Thinly slice bell pepper into strips
- Slice yellow onion, making strips
- Peel and mince ginger and garlic
- Remove seeds and mince the serrano chili
- Slice the green onions, keeping the whites and greens separate
- Slice the mushrooms
- In boiling water, cook 2 servings of noodles according to package until al dente then strain and set aside.
- While noodles are cooking, heat olive oil a wok or large pan until hot, but not smoking.
- Over medium-high heat, cook bell peppers and onion for about 4 minutes until starting to soften and caramelize.
- Add ginger, garlic, chili and white parts of green onions and cook until fragrant, about 1 minute.
- Add mushrooms and cook another 1 minute.
- Add Coco Aminos mixture and cook until reduced by about half, about 2 minutes.
- Remove from heat and stir in cooked noodles and sesame oil, mixing until coated.
- Serve topped with the greens of the green onions.
