Single Serve Chocolate Peanut Butter Cookie

creamy peanut butter

baking soda

chocolate chips or chopped chocolate

Directions
- Start by melting your butter and then whisk in the peanut butter and big tree farms coconut sugar.
- Add the egg yolk and vanilla and whisk until it’s well combined.
- Fold in the flour, baking soda and salt just until there’s only a few streaks of flour left.
- Fold in the chocolate until it’s evenly distributed and freeze for 15-20 minutes.
- Preheat the oven to 350F (177C) and then roll the chilled dough into a ball. Roll the ball into more chocolate chips and bake for about 15 minutes, until the edges are browned and set and the center is no longer wet.
- Remove and tap the pan on the counter, scoot the edges back in a little and top with sea salt; rest for 10 minutes before serving.
