Chocolate Strawberry Mock-tini

strawberries, divided (2 for the shaker, 2 for the martinis)

chocolate chips, minced and crumbled

Directions
- In kettle, heat water for simple syrup. Pour cacao powder, coconut sugar, and hot water into a mason jar, stir until fully mixed. Set aside.
- Grab small sauce pan and fill with water half way. Heat on medium heat until almost boiling. On top of the heating sauce pan, place a steel bowl to create a double boiler for the melted chocolate.
- Add 1/2 cup chocolate chips and coconut oil into the steel bowl, then stir with spatula until chocolate chips are melted. Remove from heat. Grab two martini glasses, and with spoon drizzle melted chocolate around each glass. Place glasses into the fridge while you make the mocktail.
- Into cocktail shaker, add chocolate coconut simple syrup and 2 strawberries, and muddle for 5-10 seconds. Then add cashew milk and few handfuls of ice. Shake vigorously for 10 seconds.
- Grab your martini glasses from the fridge. Place 1 strawberry into the bottom of each glass. Evenly distribute mocktail into both drinks. Many cocktail shakers have a strainer built into the lid so use this to pour into the martini glasses. When pouring into the glasses, the muddled strawberries may clog the strainer, so shake the shaker as you pour. This will take quite a few shakes, so be patient.
- Garnish the tops with a pinch of minced/crumbled chocolate chips. Enjoy immediately!
