Start by melting your butter and then whisk in the peanut butter and big tree farms coconut sugar.
Add the egg yolk and vanilla and whisk until it’s well combined.
Mix together the flour, baking soda and salt.
Fold dry-ingredients into wet mixture but just until there’s only a few streaks of flour left.
Fold in the chocolate until it’s evenly distributed and freeze for 15-20 minutes.
Preheat the oven to 350°F (177°C) and then roll the chilled dough into a ball. Roll the ball into more chocolate chips and bake for about 15 minutes, until the edges are browned and set and the center is no longer wet.
Remove and tap the pan on the counter, scoot the edges back in a little and top with sea salt; rest for 10 minutes before serving.
