Quick chocolate mug cake

A friend recently gave me some coconut sugar to experiment with and I found your site while searching for how to bake with coconut sugar. Thank you for sharing your recipes. Here is one of my recipes that has been updated and improved with coconut sugar. I ll warn you, it is so quick and good, it could be dangerous. :)

  • 4 tablespoons coconut sugar
  • 4 tablespoons flour (unbleached or quinoa flour)
  • 2 tablespoons Big Tree Farms cold-processed cacao powder
  • 1 egg
  • 3 tablespoons milk
  • 3 tablespoons coconut oil
  • 3 tablespoons Big Tree Farms cacao nibs (optional)
  • a small splash of vanilla extract
  • 1 large coffee mug (microwave proof)

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 2½ - 3 minutes at 1,000 watts. The cake
will rise over the top of the mug, but don t be alarmed! Allow to cool a
little, and tip out onto a plate if desired.

Amended option added by Big Tree Farms - if you don t have a microwave, we suggest placing the mug in a water bath in the oven and cook at 350 degrees for about 15-20 minutes, depending on the size of the oven.
