Sambal Matah

This is the favorite sauce (sambal) of Frederick's and he can never get enough of it when he is in Bali.  It is a spicy and lively sauce that creates a party on the palate- one glance at the ingredients below and you will know why.  This is a great sauce that can really be used with any dish, even just a bowl of rice with sambal matah is wonderful.  The picture to the left shows grilled tuna covered in sambal matah and fresh limes.


  • 15 shallots, peeled, cut in half and finely sliced 
  • 4 cloves garlic, cut in half & sliced 
  • 15 small sliced chilies (this creates the heat, so choose the pepper of your liking)
  • 5 lemon leaves (daun limau) chopped very fine 
  • 1 tsp roasted shrimp cake (terasi), finely grated  (optional)
  • 4 stalks lemon grass, bruised and very finely sliced 
  • 1 tsp salt 
  • ¼ tsp ground black pepper 
  • 2 tbsp freshly squeezed lime juice 
  • 1/3 cup coconut oil


  1. Combine above ingredients in deep bowl and mix well for five minutes. 
  2. Season to taste with salt and pepper.

Note: Sauté finished sauce for two minutes over medium heat to enhance the beautiful flavor of this delicate sauce.
