Maple Pecan Shortbread Cookies
Ingredients
For the Cookies
1 1/2 cups
unsalted butter, softened
1 cup
Big Tree Farms Golden Coconut Sugar
1 tsp
vanilla extract
1/3 cup
gluten-free all purpose flour
2/3 cup
chopped pecans
2 tbsp
cinnamon
For the Icing
2 cups
powdered sugar
1 tbsp
maple syrup
2 tbsp
almond milk
For the Cookies
1 1/2 cups

1/3 cup
gluten-free all purpose flour
2/3 cup
chopped pecans
2 tbsp
cinnamon
For the Icing
2 cups
powdered sugar
1 tbsp
maple syrup
2 tbsp
almond milk
Directions
- In a large bowl, add your softened butter, and with a hand mixer beat until smooth
- Add in your Big Tree Farms Golden Coconut Sugar and blend for a minute, until creamy
- Add your maple syrup and vanilla extract and mix again
- Add cinnamon and flour and mix until it’s mostly mixed in
- Flour a clean work surface and place the cookie dough on top
- Pour your chopped pecans on top of the dough and mix it in with the dough
- Roll your dough out on parchment paper with a rolling pin
- Using a cookie cutter, cut them into your preferred shape
- Preheat your oven to 350 F and bake for 14-16 minutes or until edges of cookies are golden brown
- Allow the cookies to cool on the sheet before moving to cookie sheet
- Drizzle the icing on top and sprinkle your chopped pecans on top
- Enjoy!!!!
