Almond Butter Cookies

Ingredients

For the cookies:

½ cup Big Tree Farms Golden Coconut Sugar
½ cup Almond butter
½ Vanilla bean or 1 tsp vanilla bean paste
⅛ cup Almond flour
⅛ cup Applesauce
½ tsp baking soda
⅛ tsp sea salt

Toppings

Sliced almonds
Coarse sea salt

Directions

  • Preheat oven to 350°F and line a baking sheet with parchment paper. 
  • With a mixer, beat the coconut sugar, almond butter, and vanilla bean. 
  • Add the remaining ingredients and beat until incorporated. 
  • Roll into 1 inch balls and space out on baking sheet (they’ll double in size as they bake). 
  • Slightly flatten each cookie ball with the palm of your hand. 
  • Press 3 almond slices into each cookie top and sprinkle lightly with coarse sea salt.  
  • Refrigerate for 15 minutes. 
  • Bake at 350°F for 12-15 minutes until edges are golden. 
  • Let cool on cookie sheet and enjoy!
