Vanilla Chai Crumble Cookies

Ingredients

Cookie Dough

1/2 cup Unsalted Butter
1/2 cup Big Tree Farms Golden Coconut Sugar
1 Egg Yolk
1 tsp Vanilla Extract
1/2 tsp Baking Soda
1/2 tsp Vanilla Chai Loose Leaf
1/8 tsp Cinnamon
Pinch Salt
1 tsp Cornstarch
1 1/4 cup All Purpose Flour

Crumble Topping

1/2 cup Big Tree Farms Golden Coconut Sugar
4 tbsp All Purpose Flour
1/2 tsp Cinnamon
Maple Syrup

Directions

Crumble Topping

  1. Start by making the crumble.
  2. In a microwave safe bowl, melt the butter.
  3. Next add in the flour, cinnamon and the organic brown coconut sugar. Mix with a fork until pea sized pieces form. Set aside.

Cookie Dough

  1. Preheat the oven 350 degrees. Line a cookie sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and golden coconut sugar.
  3. Mix in the egg yolk and vanilla extract.
  4. Next mix in the cinnamon.
  5. Cut open a vanilla chai tea bag and scoop out 1/2 Tsp and mix in the batter.
  6. In a separate bowl, mix the all purpose flour, cornstarch and baking soda.
  7. Mix in the dry ingredients with the wet.
  8. Scoop 1 1/2 Tbsp of dough and form into a ball.
  9. Press the dough ball into the crumbs coating the top of the cookie.
  10. Place the cookie on the baking sheet and slightly flatten the cookie with your fingers. Repeat for the rest of the dough.
  11. Bake the cookies for 10 minutes. Allow the cookies to fully cook. They will be too soft and will break if you pick them up while they are warm.
  12. Drizzle some maple syrup on top and enjoy!
