Single Serve Chocolate Peanut Butter Cookie

Ingredients

1 tbsp salted butter, melted
1 tbsp creamy peanut butter
3 tbsp Big Tree Farms Brown Coconut Sugar
1 large egg yolk
1/3 tsp vanilla extract
2 tbsp all-purpose flour
1/8 tsp baking soda
1 oz chocolate chips or chopped chocolate

Directions

  1. Start by melting your butter and then whisk in the peanut butter and big tree farms coconut sugar.
  2. Add the egg yolk and vanilla and whisk until it’s well combined.
  3. Fold in the flour, baking soda and salt just until there’s only a few streaks of flour left.
  4. Fold in the chocolate until it’s evenly distributed and freeze for 15-20 minutes.
  5. Preheat the oven to 350F (177C) and then roll the chilled dough into a ball. Roll the ball into more chocolate chips and bake for about 15 minutes, until the edges are browned and set and the center is no longer wet.
  6. Remove and tap the pan on the counter, scoot the edges back in a little and top with sea salt; rest for 10 minutes before serving.
