Maple Pecan Shortbread Cookies

Ingredients

For the Cookies

1 1/2 cups unsalted butter, softened
1 cup Big Tree Farms Golden Coconut Sugar
1 tsp vanilla extract
1/3 cup gluten-free all purpose flour
2/3 cup chopped pecans
2 tbsp cinnamon

For the Icing

2 cups powdered sugar
1 tbsp maple syrup
2 tbsp almond milk

Directions

  1. In a large bowl, add your softened butter, and with a hand mixer beat until smooth
  2. Add in your Big Tree Farms Golden Coconut Sugar and blend for a minute, until creamy
  3. Add your maple syrup and vanilla extract and mix again
  4. Add cinnamon and flour and mix until it’s mostly mixed in
  5. Flour a clean work surface and place the cookie dough on top
  6. Pour your chopped pecans on top of the dough and mix it in with the dough
  7. Roll your dough out on parchment paper with a rolling pin
  8. Using a cookie cutter, cut them into your preferred shape
  9. Preheat your oven to 350 F and bake for 14-16 minutes or until edges of cookies are golden brown
  10. Allow the cookies to cool on the sheet before moving to cookie sheet
  11. Drizzle the icing on top and sprinkle your chopped pecans on top
