Soba Noodle Stir Fry

Ingredients

  • 3 tbsp Big Tree Farms Organic Coco Aminos
  • 3 tbsp apple cider vinegar
  • 2 servings soba noodles
  • 1-2 tbsp olive oil1red bell pepper
  • ¼ cup yellow onion
  • 2 cloves garlic 
  • 1-2 tbsp ginger, fresh
  • 1 tsp serrano chili
  • 1 cup favorite mushrooms

Instructions

  1. Bring a medium pot of water to boil  
  2. In a small bowl stir together Big Tree Farms Organic Coco Aminos, and apple cider vinegar. Set aside. 
  3. Meanwhile, prep veggies:  
  4. In boiling water, cook 2 servings of noodles according to package until al dente then strain and set aside. 
  5. While noodles are cooking, heat olive oil a wok or large pan until hot, but not smoking. 
  6. Over medium-high heat, cook bell peppers and onion for about 4 minutes until starting to soften and caramelize. 
  7. Add ginger, garlic, chili and white parts of green onions and cook until fragrant, about 1 minute. 
  8. Add mushrooms and cook another 1 minute. 
  9. Add Coco Aminos mixture and cook until reduced by about half, about 2 minutes.  
  10. Remove from heat and stir in cooked noodles and sesame oil, mixing until coated.  
  11. Serve topped with the greens of the green onions.
