For the cookies:
- ½ cup Big Tree Farms Golden Coconut Sugar
- ½ cup Almond butter
- ½ Vanilla bean or 1 tsp vanilla bean paste
- ⅛ cup Almond flour
- ⅛ cup Applesauce
- ½ tsp baking soda
- ⅛ tsp sea salt
Toppings
- Sliced almonds
- Coarse sea salt
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- With a mixer, beat the coconut sugar, almond butter, and vanilla bean.
- Add the remaining ingredients and beat until incorporated.
- Roll into 1 inch balls and space out on baking sheet (they’ll double in size as they bake).
- Slightly flatten each cookie ball with the palm of your hand.
- Press 3 almond slices into each cookie top and sprinkle lightly with coarse sea salt.
- Refrigerate for 15 minutes.
- Bake at 350°F for 12-15 minutes until edges are golden.
- Let cool on cookie sheet and enjoy!
