Food Talk: The genius raw vegan cakes of Stephen McCarty

We have followed chef Stephen McCarty on his wildly popular Instagram account for ages, marveled at his colorful and intricately decorated cakes, read about his story in Vogue, and seen him mentioned on countless other blog posts. However, it took until 2016 for us to find out that he chooses to bring his creations to life with our coconut nectar!

We are truly honored to be part of his creative process and had to ask him a few questions:

What inspires your art? 

When I'm about to make a cake, I enter a meditative space and look at a photo of the person I'll be making the cake to “tune in” to their energy. Then I ask the universe for help! It's more of a channeling process than a purely creative one. Listening to and learning from the people and the cosmos!

How did the idea of the cakes come about?

My friend Amy would make amazing raw vegan cheesecakes for special occasions. When my wife and I were visiting her in Kauai for our honeymoon, it happened to be Amy's birthday, so I wanted to make her a birthday cake! Beginning with the humblest of swirls, I slowly began to develop a way of bringing my background in visual art and psychedelic music into a delicious new format!

Why did you choose to use Big Tree Farms coconut nectar?

I started out making cakes with agave, but very quickly discovered that it was a problematic sweetener for me and my friends. Too intense of a sugar rush, and questionable processing! I turned to coconut nectar, but the only available brand had a deep molasses color that did not lend itself to making light, bright colors. When I discovered Big Tree's Blonde Coconut Nectar, it was a total revelation. Suddenly the whole spectrum of colors and shades was available, with a sweetener that did not dominate flavors or produce negative glycemic response!

When I happened to meet Frederick [Big Tree Farms Founder/CBiO] at a party, he shared with me the fascinating process of how the nectar is produced. It was meaningful for me to connect with him, since I already know my date and almond growers personally!
