This is the favorite sauce (sambal) of Frederick's and he can never get enough of it when he is in Bali. It is a spicy and lively sauce that creates a party on the palate- one glance at the ingredients below and you will know why. This is a great sauce that can really be used with any dish, even just a bowl of rice with sambal matah is wonderful. The picture to the left shows grilled tuna covered in sambal matah and fresh limes.
Note: Sauté finished sauce for two minutes over medium heat to enhance the beautiful flavor of this delicate sauce.
